I find that when my tahini is past its best it tends to go hard beneath the oil, which makes it difficult to manipulate and a bit off putting. I refridgerate my opened Tahini which comes in a glass jar. You'll know if it has begun to be inedible by the odor. Think of oil that smells rancid.
